How to make Smashed Mexican Wrap | Smashed Mexican Wrap Recipe
This easy recipe of smashed Mexican wrap was shared by chef and digital content creator Guntas Sethi (@chefguntas). Start by roasting the boiled corn. Once roasted, drain the corn and keep it in a bowl. Now add chopped vegetables – tomatoes, capsicum, bell pepper, coriander and some spices – cumin powder, paprika or red chili powder, salt – and pour some lemon juice on top. Mix all the ingredients well and keep aside.
To prepare the mint yogurt dressing, take some yogurt in a bowl and add mint chutney and lemon juice to it. Mix well and keep aside. For the bean filling, take two cups of boiled rajma. Now add finely chopped onion, garlic, paprika or red chili powder, Mexican masala, salt and soya sauce. Mash it well and make small balls out of it. Take the remaining roti or tortilla wrap and spread the bean filling in it. Spread some oil in a pan and let it heat up. Place the prepared bean-filled bread on the pan and cook for 7-8 minutes on each side. Sprinkle some grated cheese over it and let it melt. Take it off the pan and enjoy it with corn salsa and mint yogurt dressing.
