Material:
- 3 medium onions, chopped
- 1.5 teaspoon mustard seeds
- 1 teaspoon fenugreek seeds
- 1 teaspoon cumin
- 1.5 tbsp white vinegar or fresh lemon juice
- 1 teaspoon red chili powder
- 1 teaspoon garam masala powder
- salt to taste
- 1 teaspoon ginger, julienned
- 1-2 green chillies, finely chopped
- fresh coriander, chopped
- 2-3 spoons mustard oil
Instruction:
- Prepare the masala: Dry roast mustard, fenugreek seeds and cumin seeds until fragrant. Let them cool and then grind them coarsely.
- Mix the ingredients: In a large bowl, combine chopped onion, green chilies, ginger, coriander, red chili powder, garam masala powder, salt, and vinegar. Mix well to coat the onions evenly.
- Temper the pickle: Heat mustard oil in a small pan until it starts smoking. Add the ground spices and let them cook for a few seconds.
