WATCH: Texas-based vlogger makes Kerala-style biryani, Indian food lovers love it

Biryani is one of the most favorite dishes in India. Different regions of the country have their own versions of this dish and take great pride in their distinctive ingredients, flavors and techniques. Recently, a video showing a Texas-based vlogger attempting to make Kerala-style biryani got a lot of attention on Instagram. It was shared by @barefoodtim (Tim Lally). The vlogger starts by gathering together some whole spices and other key ingredients, which include star anise, cloves, green cardamom, cinnamon, cumin, red chilli, black pepper etc. He makes his biryani masala by mixing them together.

He is then seen chopping onions to prepare them for later use. He pours ghee in a saucepan and adds cashew nuts and raisins. He fries them together and takes them out after some time. He adds onions to the same vessel and cooks for a few minutes. Later, he adds the prepared masala into the pan along with the chicken pieces. He flavors them with more masala powder and keeps turning them until they are well coated. Next, he adds chopped tomatoes, salt and curd to the pan. He covers it and lets the chicken cook thoroughly.

Meanwhile, he cooks the rice with a handful of whole spices for added aroma. He returns to the pot with the chicken and sprinkles some masala and mint leaves on it. He puts a layer of cooked rice on top of it. He garnishes this layer with fried onions, cashew nuts and raisins. He adds another layer of rice, followed by another round of garnishes. In the end, he is seen serving and tasting the biryani himself. He declared that every bite was “packed with flavor”. Watch the full video below:
