You will be happy to know that it is very easy to make Jim Jam Cheesecake at home. Follow these steps to make it to the best of taste:
Prepare the Base
Grind the bottom layers of Jim Jam biscuits to make them coarse. Combine them with melted butter and mix well. Press the mixture into a cheesecake mould lined with butter paper. Keep aside.
Make the Cream Cheese Mixture
Whip the whipping cream in a bowl until it forms stiff peaks. In a separate bowl, combine the cream cheese, caster sugar and Jim Jam biscuit cream. Whip until smooth and fluffy. Add the vanilla bean paste and lemon zest.
Prepare the Jelly
Boil 1 litre water in a saucepan. Add jelly premix crystals, stir well and boil for a minute.
Assemble the Cheesecake
Pour half of the cream cheese mixture into the prepared base and let it sit for 15 minutes. Once set, pour the jelly mixture over the cream cheese layer. Let the jelly set. Pour the remaining cream cheese mixture on top. Garnish with a top layer of biscuits. Serve chilled!
