Before we get into the recipe, let’s learn about the benefits of sabudana. This starchy ingredient is derived from cassava and has several nutritional benefits:

How to make Sabudana Pakodas:

First, prepare the sabudana. Wash half a cup of sabudana thoroughly to remove excess starch, which can make your pakoras sticky. After cleaning the sabudana, soak it in half a cup of warm water for about 1 to 2 hours.

Preparing a delicious filling
While the sabudana is soaking, prepare the yummy filling. Heat some oil in a pan and sauté finely chopped ginger and garlic until they turn golden and aromatic. This aromatic base gives depth to the filling. Next, add finely chopped vegetables of your choice; we recommend a colourful mix of cabbage, capsicum and carrots for a vibrant and nutritious filling.

To enhance the flavour, add a drizzle of soy sauce and a drop of chili oil. Soy sauce contributes umami, while chili oil brings a pleasant kick. Add pepper and salt to taste. For extra creaminess and protein, crumble some paneer. It not only enriches the filling but also balances the flavour with its mild flavour. Finally, garnish the mixture with chopped green onions for a fresh, crunchy finish.

Making dumplings
Once your sabudana is well soaked and the filling is ready, it’s time to make the pakoras. Put the soaked sabudana in a bowl and mash it well until it becomes a soft dough. This will serve as the outer layer of your pakoras.

Now, take small pieces of the sabudana dough and spread them on your palm. Place a spoonful of the yummy filling in the centre and carefully wrap the dough around it to form a ball. Make sure to seal the edges well so that the filling doesn’t spill out while steaming. Repeat this process until all your pakoras are made.

Steaming to perfection
To cook the dumplings, place them in a steamer. Steam for about 6 to 7 minutes. This gentle cooking method helps the dumplings retain their sponginess, while infusing them with the aromatic flavors of the filling. The result is a delicious dish that is light yet satisfying.
