Although both techniques add taste to food and materials, spices and tastes are different.

What is spice?

The seasoning is all about enhancing the natural taste without changing its original taste. According to your recipe, you can find spices in dried or wet forms. The most common spice is salt. It does not add a new taste, but just enhances the taste of the dish. Think about how a simple bowl of lentils or khichdi tastes the taste without salt, but immediately gets better with its right amount. Some other examples of seasoning are black pepper, cumin (cumin), and hing (hyphatida) are also commonly used to enhance the taste of the material. They do not dominate the dish, but simply bring out the existing tastes. Therefore, seasoning is important because it makes the taste of food different.

What is taste?

Unlike masala, taste has a different role in cooking. The taste actually adds a new taste to a dish. Think how adding Achachi to your tea changes its taste, or a few drops of vanilla extract completely change the taste of a plain cake batsman. Similarly, material dishes like Kasuri fenugreek, ginger, garlic, tamarind, etc. gives its signature taste. Can you imagine making butter chicken without adding Kasuri fenugreek? It will not be just one taste! The flaving material is strong, so they decide the final taste of the dishes.
