How to ensure that Chicken Malai Keema turns out to be creamy?

What differentiates this dish from regular keema is its creaminess. To achieve this, make sure you add plenty of cheese while cooking. Although this recipe uses processed cheese, you can also opt for mozzarella. Try using fresh cheese for the perfect creamy texture. The more cheese you add, the better your Chicken Malai Keema will be.

  • In a bowl, mix chicken mince, curd, cream, ginger-garlic-chilli paste, black pepper powder, chilli pieces and lemon juice. mix well.
  • Next, heat ghee in a large pan and add black pepper, bay leaves, chopped green chillies and green cardamom. Fry for a few seconds.
  • Now put the chicken mince mixture in the pan and cook until the mince is cooked well.
  • Once the mince is 90% cooked, add birista (fried onions), fresh mint leaves and heaps of processed cheese.
  • Smoke the mixture, then garnish with more barista, mint leaves, fried raisins and green chillies.
  • Enjoy your creamy chicken malai keema with crunchy parathas!
