1. Choose the right tomatoes

The basis of this delicious dish is choosing the right tomatoes. Choose ripe, juicy tomatoes with a balance of sourness and sweetness. Choose tomatoes that are firm but slightly soft on pressing, make sure they are red and plump to give your rasam a robust flavour and vibrant colour. Trust us, choosing the right tomatoes can up your rasam game. Remember to peel the tomatoes before blending to get a smooth texture and rich flavour.

2. Make the spice mix

The distinctive flavour of tomato rasam comes from a spice mix called rasam powder. Although you can buy it from the store, for a fresher taste, consider making your own at home. Roast coriander seeds, cumin seeds, black pepper, dried red chillies and a pinch of fenugreek until fragrant. Grind these spices finely. You can store your homemade rasam powder in an airtight container to keep it fresh for weeks.

3. Add tamarind extract

The pungency of tomato rasam doesn’t come from tomatoes alone; tamarind plays a key role here. Soak a small ball of tamarind pulp in hot water for about 15 minutes. When they crackle, add cumin seeds, dried red chilies, asafoetida and curry leaves. To enhance the flavor further, add crushed garlic cloves to the tempering.
