Bhapiya, a less famous but delicious dish, comes from the Sheharwali community of Azimganj, West Bengal. The community is famous for its rich vegetarian cuisine influenced by Rajasthani and Bengali traditions. Bhapiya is a simple, healthy and versatile dish that reflects the community’s emphasis on nutritious food. Recently, chef Neha Deepak Shah shared her twist on this classic recipe on Instagram, inspiring food lovers to try it.

Traditionally, bhapiya is made using moong dal (yellow lentils), but Chef Neha’s version includes a mixture of moong dal and urad dal (black gram dal). This mixture enhances the texture and nutritional value of the dish, making it even more delicious and satisfying. It is an ideal choice for a light meal or snack and is especially loved due to its ease of preparation.

How to make Bhapiya I Healthy Breakfast Recipe

How to prepare Bhapiya:
Mix soaked moong dal, urad dal, green chillies, ginger, asafoetida and salt with a splash of ice water until you get a smooth and fluffy batter. The ice water helps make the batter light and airy.
Add turmeric, crushed green peas, dried mint and fresh coriander. Mix gently to combine all ingredients evenly.

Key Cooking Tips:

  1. To make sure the batter is light, do a simple test: drop a small amount of it into water – it should float if properly aerated.
  2. Steam over medium-high heat for 12 to 15 minutes, until the batter is completely cooked.
  3. For best flavor and texture, serve the dish immediately while it is hot.
