How to Make South Indian Egg Rice

First of all, heat some oil in a pan. Add 1 tbsp finely chopped garlic, chopped green chillies, curry leaves and chopped onion.

Fry the onion until soft, then add chopped tomatoes. Sprinkle some salt and let the tomatoes cook until they become nice and mushy.

After this add turmeric, garam masala and red chili powder. Mix all this and fry for two minutes. Now it’s time to get the eggs! Crack six eggs into a bowl, add a pinch of salt, black pepper and a little cayenne pepper, then beat them well. Put the eggs in the pan with the spices.

Keep stirring the eggs continuously while cooking them. Once they are roasted well, add 2 cups cooked rice. If you like a little extra heat, add a splash of chili sauce here.

Mix rice and egg well. Sprinkle chopped coriander and chopped green onion over it. And that’s it – your South Indian egg rice is ready!
