Vermicelli, also known as sevaiyan, is a staple ingredient in many Indian sweet and savoury recipes. Though you can easily find various packaged brands in stores these days, many families still make fresh, homemade sevaiyan, especially during festivals. It is cleaner and fresher, and there are no chances of strange things getting mixed in it. Traditionally, it is made with maida, but if you are opting for a healthier option, you can use semolina or wheat flour. You can make it by hand or use a machine. And guess what? It is extremely easy to make and store at home. So, let’s get started!

How To Make Seviyan At Home:

1. Start with the dough

First, take one cup of all purpose flour in a bowl. Now add water slowly and knead it into a dough. Keep it just right – not too hard, not too soft. And no, you don’t need oil or salt in it. Just water is enough.

2. Use water sparingly

Be careful with the water – you should not add too much. Add it in small amounts and mix well. If the dough becomes too wet, you will have trouble making perfect strands of vermicelli as they will stick to your hands.

3. Let it rest

After kneading, let the dough rest for some time. Let it rest for at least 30 minutes. This makes the dough more pliable and easier to work with.

4. Dry in the sun

It is very important to dry the vermicelli. If there is any moisture left in them, they may get spoiled when stored. Make sure you dry them thoroughly in the sun before storing them.

How to Shape Seviyan(Vermicelli)

Take a small piece of dough and roll it between your palms to form thin noodle-like threads. Once you have formed your thread, hold one end between two fingers and use the other hand to tear it into small, thin pieces. Spread these small pieces on a plate or paper to dry. Repeat the same with the rest of the dough.

Leave the pieces to dry in the sun for 4 to 5 hours. Once completely dried, store them in an airtight container. Now, whenever you are in the mood to eat something delicious, just dry roast them and make your favourite sev.
