This coconut rasam recipe comes from @mygardenofrecipes on Instagram. First of all, grind garlic, black pepper, cumin and coriander seeds in a mortar and pestle. Mash one boiled tomato and a small piece of tamarind in a bowl. Add coconut milk, salt, turmeric, a pinch of asafoetida and green coriander. Mix it all up! Heat oil in a pan and add mustard seeds, dry red chillies, green chillies, small onions, curry leaves and garlic-spice mixture. Fry everything, then add the coconut milk mixture and let it cook for a few minutes. Garnish with fresh coriander leaves. Serve hot and enjoy!
