Have you ever wondered how the commonly used sugar and jaggery are made from sugarcane? A video going viral online shows us a simple step-by-step process of making jaggery. In the reel shared by @lucymakes_, the vlogger first cuts and peels the sugarcane with the help of another person. She extracts the juice of the pieces using a large juicer. Once done, she strains the liquid and collects it in a large container. Next, she places a vessel like a kadhai on the fire on an outdoor grilltop. She carefully pours the strained juice into the vessel and stirs it lightly with a spatula.

She cooks the juice this way for a while until it thickens. She explains that the sugar water needs to be brought to a boil over medium-high heat and keep stirring it. Once you take it off the heat, stir the thickened syrup until all the bubbles are gone, she instructs. Once that’s done, she pours it out on a flat surface and lets it cool. Later, she is seen pulling apart the dry sugar with her hands. It seems to have a different texture, which she compares to wood. Once you’ve managed to get small pieces, she clarifies that you can dissolve them in the liquid whenever you want. You can also grind it to get a fine powder consistency. The vlogger added that this sugar can be used to make desserts like brown sugar boba or “the best chocolate chip cookies ever.”

In the caption, the vlogger clarified that she did indeed make jaggery. She wrote, “There are many different ways to make it, this is just the way I made it with the equipment I already had. And since we’re not extracting the molasses from this sugar, or crystallizing it, we’re actually making a traditional form of sugar called jaggery or gur. It’s a very common ingredient used in cooking around the world, especially in India and many other South Asian countries. If you’re wondering why it’s brown, it’s because it contains a good amount of molasses (jaggery comes from sugarcane). To make crystallized white sugar you need to use a centrifuge to extract the molasses, which I definitely want to try someday.”
