First, roast Kashmiri red chillies, green cardamom, black pepper, fennel seeds, cumin seeds, coriander seeds and cinnamon in a pan. Once they cool, transfer the spices to a blender and grind them into a fine powder. And voila – fresh, aromatic shawarma masala is ready to use. Transfer the spices to an airtight jar and store.
