Material:
Cold Cream – 1 ¼ cup
Milk – 1 cup
Cocoa – 3 tablespoons
Gelatin – 1 tablespoon
Sugar – 1 ¼ cup
Eggs – 3 (separate)
Water – ½ cup
Method:
Step – 1: Separate the eggs and put the yolk in a double boiler and the white in a non-greased bowl.
Step – 2: Sprinkle the gelatin in half a cup of water and let it soak.
Step – 3: Add sugar to the yolks and whisk to form a light and creamy mixture. Mix milk and cocoa in a separate container.
Step – 4: Place the double boiler on low flame and pour the milk and cocoa mixture and the yolk mixture into it and keep stirring the mixture continuously. This will be your custard for the soufflé.
Step – 5: Add the soaked gelatin to the custard and stir till the mixture attains a coating consistency.
Step – 6: Remove the boiler from the flame and allow it to cool down till it partially solidifies.
Step – 7: Beat the egg whites and cream until thick.
Step – 8: Mix the cream into the custard and save some for decoration. Maintain a folding motion while adding the cream and then add the egg whites as well, making sure there are no lumps.
Step – 9: Pour the entire mixture into a bowl and garnish it with cream and then keep it in the fridge to set.
Step – 10: For the chocolate icing with cream, whip 1 cup chilled cream, 2 tbsp cocoa and ¼ cup sugar till stiff and serve your chocolate soufflé.
