1. Prepare the potatoes

Heat oil in a pan and add mustard seeds, chopped ginger and garlic. Fry till they start to crackle and then add green chillies and curry leaves to the pan. Mix well before adding potatoes to the mixture. Add the spices on top – turmeric, asafoetida and salt – and mix the ingredients. Remove from the heat and set aside.

2. Make garlic chutney

Heat some oil in a pan. When it is cooked, add dried red chilies and garlic cloves to it. Roast it before adding some sesame seeds and grated coconut to the mixture. Next, add salt, peanuts, dry mango powder and red chili powder. Mix well and let it cool. When it comes to normal room temperature, grind it in a blender.

3. Make Vada Pav

Heat your sandwich grill. Now take two medium sized pavs and cut them from the middle. Apply some butter on the sandwich grill and place the pav on it. In the middle of the pav slice, put a spoon of the potato mixture. Pour green chutney over it and sprinkle freshly made garlic chutney on top. Now take some paneer and using a wooden stick pin it into the potato mixture.

4. Cook the Vada Pav

Put a drop of butter on it and close the sandwich grill. Make sure the wooden stick is outside the grill area so that it does not burn. Cook it for 5-6 minutes and enjoy!
