Jackfruit is a summer favourite for many. It brings a variety of flavours to the food. And, how can we forget that jackfruit is also called veg mutton? But have you ever heard of jackfruit pakodas?
In a now-viral Instagram video, a man has shown how to make stuffed jackfruit pakodas that will make a healthy change to your diet. The man begins his culinary feat by cutting a thorny jumbo jackfruit into two halves. He cleans the peel and removes the seeds. Next, it is cut into small oval pieces.
The pieces are added to a ghee-coated pan. Taking a health-conscious step, the man adds ample amount of liquid jaggery to the mix instead of sugar. Awesome. Diet freaks, are you taking notes? This is followed by the addition of grated coconut and cardamom powder.
Wait, there’s more to come. In a separate bowl, the man adds two cups of rice flour, along with 1 tablespoon each of salt and ghee. Jackfruit paste is added to the mixture, followed by more liquid jaggery and cardamom powder. The pakoras are almost ready. The man whisks the mixture, creating a crumbly texture, and lets the water fall off. The thick paste filled with fruit stuffing is placed inside cone-shaped jackfruit leaves. They are steamed and voila! The cone jackfruit pakoras are ready to be served. Enjoy!
