Bathua kadhi gives an interesting twist to regular kadhi. To make it, gram flour paste is mixed with Bathua leaves and onion. Unlike regular kadhi, it does not contain pakodas. The recipe of this Bathua Kadhi was shared by Instagram page @cookwithrupamsehtya. Start by adding gram flour, curd, turmeric and water to a food processor. Blend to make a smooth paste. Next, grind ginger, garlic cloves, green chillies, roasted coriander seeds together in a mortar and pestle. Cut onion and bathua leaves and keep aside. Heat ghee in a pan and add asafoetida, cumin, mustard, dry red chilli and fenugreek. Fry well and add onion. Mix it well and add turmeric. Add bathua leaves, cover the pan with a lid and let it cook for a few minutes. Add gram flour paste and add more water. Cover and cook slowly. Pour the spicy tadka over the kadhi and enjoy! Your Bathua Kadhi is now ready to taste!
