One of the resort’s newest gems is Bonita, their signature restaurant that’s like a love letter to flavor. Bonita’s lively yet casual vibe sets the stage for a menu that’s all about merging the best of local and global flavors. With a blend of traditional Goan touches and modern décor, Bonita strikes a balance between honoring Goa’s roots and embracing a new future.
On my recent visit, we got the full Bonita experience. The night started with Wild Mushroom Soup – earthy, hearty and the perfect warm-up. Next were the starters, where the Patatas Bravas brought just the right amount of spicy kick with their tangy tomato sauce and garlic aioli. Then came the Rachido Beets and Burrata – a mix of creamy burrata and sweet beets, all tied together by a charred citrus dressing that kept things interesting.
Now let’s talk pizza! The Smoky Barbecue Chicken Pizza was a real winner, topped with grilled onions, charred corn and jalapenos. Smoky, delicious, and impossible to share (although we tried). If you are a pizza lover, this is a must try.
For mains, we tried the Grilled Mushroom Krapo – a refreshing twist on the Thai classic with minced mushrooms, sticky rice and basil-chili sauce that brings out the major flavours. But the real star of the show was the grilled lobster spaghetti, smothered in deep black garlic butter with bouillabaisse emulsion. This seafood pasta was made right and shows how much care goes into Bonita’s menu.
To finish off the meal, we went for the Chile Pineapple Tres Leches for dessert. This dessert was next level, with the smoky sweet roasted pineapple matching perfectly with the light and fluffy tres leches – just the thing to end on a high note.
