This delicious and easy to make recipe is a perfect blend of tangy, spicy and nutty flavours, making it a great dish that will tantalise your taste buds. Achari Missi Roti is a unique twist on the classic Indian flatbread, incorporating the flavour of traditional Indian pickles (achar). The combination of roasted gram flour (besan), aromatic spices and tangy achar masala makes for a truly unique dish.

This delicious Achari Missi Roti recipe has been shared by Chef Neha Dipak Shah on her Instagram handle. Let’s see how it is made.

  1. In a bowl, combine roasted gram flour, ghee, mustard oil, asafoetida, coriander seeds, fennel seeds, cumin seeds, nigella seeds, red chili powder, turmeric powder, kasuri methi, salt and black salt. Mix well until all the ingredients are evenly combined.
  2. Add enough roti or paratha flour and knead the dough. Knead the dough until it becomes smooth and elastic.
  3. Divide the dough into equal sized portions and roll them into thin circles.
  4. Place one spoon of gram flour mixture in the centre of each rolled ball.
  5. Bring the edges of the dough together and seal tightly to form a small pouch.
  6. Make the filled dough into a thin circle again.
  7. Heat the pan on medium flame and cook the paratha on both sides until it is golden brown and crispy. You can also pour some ghee on the pan for extra flavor.

Tips to make Perfect Achari Missi Roti

  • Do not overfill: Make sure you do not fill the paratha with too much stuffing, else it may tear while cooking.
  • Remove excess dough: Before cooking, remove the excess dough from the top of the paratha so that it cooks well.
  • Adjust the spice level: Adjust the amount of red chili powder and black salt according to your taste.
  • Experiment with the stuffing: You can customize the stuffing by adding other ingredients like grated cheese, chopped vegetables, or grated coconut.
