In Kerala, Stew or Ishtu Typically a light, delicious curry refers to the base of a coconut milk. It is usually white in color (or light yellow in addition to turmeric). There is a popular pair appam with Stew. It is designed using a fermented rice batsman like a soft, fluffy pancake. Coconut is also added to some form or the other. 2. Putu with Kadla Curry
Kadala Curry includes a black chickpeas cooked with coconut and Kerala Garm Masala – a masala mixture usually made with fennel, mace, cinnamon, cloves, nutmeg, etc. Its spickness can be customized as per your choice. There is a step-by-step recipe here.

3. Idiappam with egg curry
There are several versions of Kerala-style eggs. Some dishes include coconut milk while others are not. The exact sour agent used may also vary. But all of them are packed with the goodness of many spices, for which this state is famous. Read a recipe for Kerala egg curry here.
If you want to appreciate the layers of this egg curry yumminess, choose the option for a layered company: Idiyappam (string hopper). This includes varieties such as boiled noodles made of rice flour. A special idiyappam mold/presser is used. This rigid delicateness can be served as a ball or a slightly flat pancake. 4. Parota with Kurma
Preparation like another curry You should try to Kerala-style Kurma. While this dish has several versions across the country, it especially obtains its unique taste from a local staple such as coconut and specific spices. Like stew, the kurma can also be made with vegetables as well as chicken/meat.
One of the most famous flatbreds in Kerala, Malabar Parota is a great way to scoop Kurma. Pathiri is a traditional flatbread that is believed to have originated from the Malabar region of North Kerala. Although it may not be as popular outside the state as Malabar Parotta, this is a pleasure you should not ignore. Pathiri is made using only 3-4 basic ingredients, including rice flour, salt and water (full recipe here). Its soft and delicate texture is similar to chaptis/rotis rather than other rice flour-based carlite foods. Its external appearance may remind you of a very flat dosa, but this is not the same thing. Within the overall category of kerlite cuisine, Pathiri is called a part of the Malabari Muslim cuisine. Pathiri can be paired with different types of dry preparations. 8. Ghee rice with Pisces Molie
Rice is an essential part of Kerala dishes as it is the most consumed grain in the state. It is used to create an innumerable amount, from snacks to desserts. Several rice varieties are found in Kerala, including Matta Rice (Palakkad Matta Rice/Kerala Red Rice), Jerkasala Rice (Wayanadan Kaima Rice), Gandhasala Rice, Navara Rice, and more. This curry -like preparation is slightly different from the region in South India. Thus, the sambar you find in Tamil Nadu will not be the same as you find in Kerala. It is said to have been named in Kerala from a humble roadside food couples known as “Thatikadas”. Thatu Dosa is usually smaller and thicker than a regular dosa.
