Masterchef Aruna Vijay has shared the recipe of this orange peel curry on her Instagram. Start by cleaning and slicing the orange peels. Heat oil in a pan and add chopped green chillies, curry leaves and chopped orange peels. Let them cook for a few minutes. Then, add sambar masala along with salt and mix it well. Add tamarind water and cook until bubbles appear on top. Finally, add jaggery powder and mix well. Serve hot and enjoy!

Tips for making the perfect orange peel curry:

1. Use gingelly oil

Aruna suggests using gingelly (sesame) oil to cook all the ingredients, as it gives the curry a distinct flavor that regular vegetable oil cannot.

2. Do not overcook orange peels

She recommends cooking the orange peels for no more than 5-7 minutes. Overcooking may cause the curry to taste bitter.

3. Choose good quality sambar masala

It is essential to use good quality sambar masala. If possible make it fresh at home for the best taste.
