In this recipe, poha is used to make dhokla, along with semolina, and it is stuffed with a spicy potato stuffing to make it yummy. Is Poha Dhokla Sandwich healthy?
Poha Dhokla Sandwich is a steamed snack, which means it uses very little oil. It requires less oil than pan-fried snacks like tikkis and cutlets. Dhokla is high in fibre due to the use of poha and semolina. The potato stuffing includes boiled and cooled potatoes, which are also considered good for health. The spices and other ingredients further add to the nutritional value of this dish. The only two concerns are the use of fruit salt and readymade seasonings. Individuals on a low-sodium diet are usually advised to limit their intake of foods with fruit salt. If you are one of them, save this snack for a special occasion. Additionally, you can replace the suggested seasonings with homemade spice mixes or other spices to suit your liking. This recipe is basically experimental, so feel free to customize the filling to your liking.

How to make Poha Dhokla Sandwich at home | Easy recipe to make stuffed Poha Semolina Sandwich
1. Combine soaked poha pieces, semolina, curd, green chillies and ginger in a grinding jar. Grind to a coarse paste and divide it equally into two bowls.
2. Make a solution by adding salt, fruit salt/baking soda and water in a bowl. Mix well with the help of a whisk.
3. Grease a dhokla thali/baking tin or any plate with a raised surface. Pour the poha batter into the dish and spread it evenly, leaving space for additional layers.
4. Boil water in a flat bottomed pan/saucepan or steamer, place a small stand in it and put the filled plate on it. Cover the vessel and let the steam cook the batter mixture, just like idli/dhokla.
5. Prepare the potato mixture by combining mashed potatoes, salt, red chilli flakes, chopped capsicum, coriander, lemon juice and spices in a large bowl.
6. Use a toothpick to check if the dhokla is cooked or not and then remove the plate from the flame. Apply green chutney or any chutney/sauce of your choice on it.
7. Place the prepared potato stuffing on top.
8. Take another bowl of the poha mixture that you kept aside earlier. Add salt, fruit salt and water to it. Pour it over the potato layer and spread it evenly over the entire plate.
9. Place the plate back in the steamer and cook for a few more minutes. Afterwards, cut the mixture into shapes of your choice: triangles, squares, diamonds, etc.
10. To make it a little crispy, you can cook it with a little oil on both sides if you want.
