Delhi is famous for its Chole Bhature, and with good reason too! A cultural staple in the national capital, chole bhature is served in countless eateries across the city, each offering their own unique twist on this irresistible combination of spicy chickpeas and deep-fried bread. An iconic place that has been serving this delicious dish for over six decades is Radhe Shyam Subhash Kumar Chole Bhature in Paharganj. Recently a video posted by a food vlogger went viral, showing the fascinating process behind the preparation of this delicious food at a 60-year-old establishment. The shop, which is famous for its signature Chole Bhature, has earned the praise of countless customers, and the video offers a glimpse of the steps that make the dish so special. Price? A plate of Chole Bhature with two puffed Bhature costs just Rs 90 – available from morning till night.

The video starts by showing a big pot filled with boiled gram. A worker, using his bare foot to hold the edge of the container, carefully drains off the excess water, and pours it into a separate container. Once the water is drained, the chickpeas are marinated with a secret blend of spices and fried in oil, turning them into perfect chickpeas.

In another part of the kitchen, an employee is seen mixing flour in a big container. The dough is so abundant that it fills up to his elbows when he kneads it with his bare hands. The dough is then divided into small balls and lined up neatly on the tray. In the next step, these dough balls are rolled and deep fried completely, resulting in soft, pillowy bhaturas that are golden brown on the outside and fluffy on the inside.

Finally, the dish is served with a side pickle (Pickle). The caption of the video reads, “Delhi’s most famous Chole Bhature.”

However, the Internet has criticized the behind-the-scenes video, particularly highlighting the unhygienic conditions in which the dish is prepared.

One user commented, “More than half the taste is from hands and feet.”

“Was it necessary to step on the tub?” The other one asked.

Someone wrote, “Food poisoning.”

“Sanitation crime in India,” one comment read.
