How to ensure that Maharashtrian Chana Koliwada is crispy?
The crispy texture of Chana Koliwada is what makes it so delicious. To achieve this, make sure to roast the chana in batches, as adding too many chana to the pan can result in uneven cooking. Also, do not forget to keep them on a plate lined with tissue to absorb excess oil, otherwise they will get soggy quickly.
How to make Maharashtrian Chana Koliwada | Maharashtrian Chana Koliwada Recipe
Boil the gram soaked overnight for 1 to 2 whistles, then filter it. Take a bowl and add mustard oil, turmeric powder, cumin powder, coriander powder, red chilli powder, ginger-garlic paste and salt. Add some water to make a smooth paste. Next, add the boiled gram along with the gram flour and cornflour, making sure they are well coated. Now heat oil in a pan on low-medium flame. -Put marinated gram in oil and deep fry till it becomes crisp. Don’t forget to add garlic cloves while frying. Once done, take it out on a plate lined with tissue paper. Sprinkle chaat masala on top and enjoy!
