Inherent in tradition, re -defined by innovation: A glimpse in the overall new menu of Avatara Mumbai

I would eat my vegetables every day without any complaints (and enjoy (and Avatara used to eat like those in Mumbai. For the eyes, palate, stomach and heart. With the end of the menu being “obtained” through the final courses, Avatara proved to be a fresh exterior and it is one of the many characteristics.

Avatar Mumbai recently unveiled its new tasting menu called Rasas. For Bin calling, this establishment is the domestic outpost of the same name award winning restaurant that was first opened in Dubai. Avatar Dubai is known for being the first and only vegetarian Indian restaurant in the world who won the Michelin star. This passion is part of the F&B group, including the names such as Tresind Studio, Tresind, Carnival by Tresind, Bistro Amara, and others. Avatara Mumbai opened in April 2024. In its early days, it made headlines due to several reasons: its fully vegetarian focus in a fine-dining context (which without cheese, mushrooms, onions and garlic), its artistic presentation courses and Its artistic presentation and refined revaluation of humble components like its Gourd And Bottle gourdBefore going to taste the new menu, these highlights were behind my mind. However, I was eager to know how Avatara would expand his story beyond him. What you should know here:

First, the Rasas menu of Avtara has 16 courses (the previous tasting menu were 14). This may seem challenging, but do not let the number reduce you. Chef Rahul Rana and Chef Sankate Joshi are careful in terms of the size of the part, the order of courses, with the power of tastes. The dishes tease, are happy and (sometimes) confuse the buds of someone’s taste, but they prevent them from getting overwhelmed. “Our dishes are essential for basic cooking to use deep fry or more spices or oil. A course, many of them do so,” shef says.

Secondly, the new menu is conceived as the discovery of six fundamental tastes known as “rasa” in Ayurveda: sweet, sour, salty, bitter, spicy and astringent. This does not mean that courses have direct medicinal benefits. Instead, the chef has been inspired by these traditional concepts, which is a framework to demonstrate the versatility of the elected ingredients. But how does it translate to Pak Mission Plate (s)? Quite attractive, as we came to know.

The first six courses are served together and reaches a stunning reception with dramaticness. They represent each of the 6 juices named menu. We have been told that Ayurvedic principles encourage start with Madhura (sweet) and we comply. Cut -shaped Maakan cream The platform in my mouth quickly and I enter its smooth sweetness with a smile. Next, we are directed to try Lavana (Namkeen) course. Pungent shape Applam The crisp decomposes in the shark, complementing by a soft texture of brazed red beets and ghee roast ketchup. In the next course, crispness (Kashaya/Kasaila) is of a different kind, as it is taken from a charming corn. GhorTops with Sarsan’s greens And spicy radish, its taste is clearly familiar but still surprise us.

We are advised to close the remaining three courses in front of us, before they become a pocket and each of them also proves to be a pocket of surprise. But the effects of juices do not stop there. Although the rest of the courses are not named after specific taste, they are reflected in other ways. The chef cenket clarifies, “According to Ayurveda, these 6 tastes should be included in our daily diet. Thus, each dish on the menu includes components from them. For example, when, when, when, when, when, when, Bal Mitai And Burnsha Ras Combined, the former represents Madhura/Sweet, while the latter brings out the other three elements, ie sour, bitter and astringent flavor. ,

I will not go into the details about all the dishes because they will be like a spiiler for a good film or series. If possible, you have to experience them for yourself and expose their hidden mysteries with the first hand. It is also a beauty journey, as the menu is unpikerly the opposite with color and every course. While hardworking plating is generally ideal in a great dining site, Avatara increases it into a astonishing form of expression.

What is more, its offerings do not stop there. Avatar does not have a cocktail menu in Mumbai, but has a comprehensive liquor list and unique non-or-ordeal beverage options. Guests can opt for domestic wine or a cuisted pair of international wine. During our meal, Head Somelier Pratik Bhargud displayed how he uses an aromaster kit for tasting and selection. Safe to say, both early wine can be comfortable for appreciation and intelligent enthusiasts and can find something for their choice here.

Avatar Mumbai wore us with a sense of balance – not only on the plate but in its overall view. The restaurant likes to call its method “rebirth” of Indian cuisine rather than reunion or any other word. After my experience, I understood the distinction better. A great food can be restored at several levels if you allow it to happen.

Where: 7th floor, Krishna Vakra Building, Juhu Tara Road, OPP. Juhu Garden, Hasmukh Nagar, Santa Cruz (West), Mumbai.
