Clean and chop various vegetables of your choice. You can use potatoes, carrots, green peas, cauliflower etc. Boil the vegetables lightly and keep aside. Now heat oil in a pan and add mustard seeds, curry leaves, green chillies, ginger garlic paste and onion. Add spice powder and fry the ingredients. After this, add boiled vegetables to it and add coconut milk. Finally, add salt and tamarind/tomatoes and cover the vessel. Cook on low flame for some time. Put garam masala and green coriander over the gravy. Enjoy hot.
