What is the difference between Akuri and Bhurji?
Now, you might be wondering how Akuri is different from your everyday egg bhurji. While both are spicy and fried, there is one key difference – Akuri is all about creamy perfection and is slightly thinner in nature. In comparison, bhurji takes longer to cook and has a drier and firmer texture. The creaminess and liquid nature of Akuri makes it a perfect accompaniment to roti and pav!
How to make Parsi style fried eggs. Akuri Recipe
These Parsi-style fried eggs are very easy to make at home. This recipe has been shared by content creator Karan Gokani on Instagram. to make it:
1. Prepare eggs
Start by cracking eggs into a bowl. Add salt to them and beat until the ingredients are well mixed. Keep aside for 10 minutes.
2. Prepare the masala
Heat a pan on medium flame and add one spoon butter in it. Chop onion, tomato and green chilli. Put the vegetables in a buttered pan and fry until soft. Once soft, add your spices – chilli, turmeric, coriander and cumin. If the mixture becomes too thick and starts sticking, add a splash of water and let it cook. Garnish it with freshly chopped green coriander and mix well.
3. Mix the ingredients
Once the masala is ready, add beaten eggs to the mixture and mix. Turn off the flame and let the eggs cook in the flame of the pan. Keep stirring and mixing the eggs to make sure they are well combined with the spice mixture. Add a tablespoon of butter and a little vinegar, then mix well. Mix with bread and enjoy!
